Surmai Fish, King Fish
Known as the ‘King of the Indian Ocean,’ Surmai is a local fish ingrained in the Indian Ocean. It is also commonly known as Indo-Pacific King Mackerel. It is the most popular fish in Kerala and the local areas around Kerala. It is widely known as ‘Neymeen’ in Southern Kerala, ‘Aiykoora’ in the Northern part of Kerala, and ‘Vanjaram’ in Tamil Nadu and around coastal areas of Tamil Nadu.
Health Values
Surmai Fish is low in calories, low in carbs, high in protein, and contains all essential fatty acids. Apart from being higher in protein content, it also provides significant calcium and phosphorus to the body. The fish has little value of sodium and is appropriate for people who prefer a low-sodium diet. Surmai is rich in omega-3-fatty acids and vitamin B12 and low in cholesterol.
Preserving Guidelines
The best way to store surmai fish in the refrigerator requires a cooling rack sizeable enough to fit inside a large container. The cooling rack should be in a grid design with multiple openings. If the rack doesn’t have legs, figure out a way to elevate it inside the container. In case of not having a cooling rack, use another container, but punch holes in to make the fish drain.
